After a disrupted sleep last night, I thought I’d make myself a nourishing anti-inflammatory smoothie!

Just cruising through the fresh food section I picked some ingredients that are the most anti-inflammatory ones around! There’s quite a few ingredients in this smoothie, so feel free to leave some out if you wish, and put in whichever ones you’re drawn too. Or them all! Just make sure to keep the pineapple and turmeric! Pepper and coconut oil are added to help to activate turmeric for maximum absorption – so keep those ingredients in too!

Anti-Inflammatory Turmeric & Pineapple Smoothie!

Inflammation is the root cause of many chronic illnesses. This recipe is a great way to maximise your nutrient intake in a few quick gulps! Full of so many incredible vegetables and fruits!

Ingredients

  • 1 large cucumber
  • 1 zucchini
  • 1 avocado
  • 2 lemons Squeeze the lemons
  • 380 g pineapple (half of a pineapple)
  • 40 g fresh parsley (choose which type you prefer - I used curly leaf)
  • 20 g fresh ginger
  • 20 g fresh coriander
  • 1 tbsp powdered turmeric
  • 1-2 tsp coconut oil
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 and 1/2 cups filtered water Once blended you might like to add extra water and/or ice!

Method

  1. Chop the cucumber, zucchini, avocado and pineapple into large chunks then put in the Vitamix (or large blender of your choice).
  2. Squeeze the lemons and place into the blender.
  3. Add all the ingredients into the Vitamix (or large blender).
  4. Blend together on high speed. This amount of ingredients fitted perfectly into my Vitamix. If you find that your blender is too small, just divide in half and do 2 batches.
  5. Serve and enjoy! You may add extra water at the end if you prefer it less thick! I also added a nice little sprinkle of turmeric and some lemon for decoration 🙂
