
Chicken Pesto Zucchini “Pasta”
This dish is incredibly flavoursome and so easy to make!
Serves 4
Ingredients:
- 650g chicken breast
- 3 zucchinis
- Tarragon to sprinkle on top
- 1 punnet of baby tomatoes
Pesto:
- 1 – 1.5 cups fresh basil leaves
- 2 handfuls of baby spinach
- 1/3 cup macadamia nuts
- 1/3 cup pine nuts
- 1/2 cup olive oil
- 2 garlic cloves
- Juice of 1/2 lemon
- Salt and pepper to taste
- Optional: 1/3 cup of grated parmesan cheese
Method:
- Blend all pesto ingredients in a food processor until smooth
- Grate zucchinis into “pasta” or use a spiralizer – place in a bowl and sprinkle with salt
- Cut baby tomatoes in half
- Fry diced chicken breast and a handful of pine nuts on a frying pan until cooked through
- Turn down the fry pan to medium heat and add grated zucchinis, tomatoes and pesto
- Let it simmer on medium heat with lid on for approximately 10 minutes
- Serve and enjoy! You may add some tarragon on top and grated parmesan cheese (Weight loss clients emit the parmesan!)
