This amazing fresh salad is perfect for the warmer months!
For my Weight loss and Diabetes clients – leave out the following ingredients with a ** next to it 🙂
Serves: Approx 8
Ingredients:
500-550 grams raw beetroot, grated or whizzed up in a food processor
700-750 grams carrot, peeled & grated, or whizzed up in a food processor
1 pomegranate, seeds only
120 grams Danish fetta, crumbled **
1 cup fresh mint, chopped
1/2 cup raisins, chopped **
1/4 cup sunflower seeds, toasted
1/4 cup pumpkin seeds, toasted
1/2 tsp salt
Dressing:
2 tbs balsamic vinegar
1/2 cup olive oil
1 and 1/2 oranges freshly squeezed
1 tbs honey **
Place all dressing ingredients in a har with a tight lid. Shake well to combine.
In a large serving bowl, combine all the salad ingredients and mix well.
Pour over the dressing, toss again when ready to serve!
